It begins with a welcome pour and tour from Amaterra’s wine experts of the innovative gravity-flow winery, which utilizes a patent-pending bridge crane system and ballasted punch-down device to best maintain the terroir of its wines. After the tour, guests will be led into the barrel cellar which is set with glassware, soil samples, and a sorbet palate cleanser. Guests will be guided through through Amaterra’s wine, its terroir and soil types, and the descriptions of each pairing while a member of the chef’s team describes each dish. Questions are strongly encouraged.
This new program encapsulates the winery’s driving principle and its namesake, as Amaterra means “For the love of Earth.” Each dish is a collaboration between the winemakers and culinary team, with ingredients drawn from the same areas as the wines. It also reflects Amaterra’s dedication to creating a holistic dining experience, emphasizing the pairings and space and the way they interact with the wines.
“Toni made a reservation for a Saturday morning tour and James Avenoso was our tour guide. His knowledge of the winemaking process was incredible, and we had a really great tour of the process and all the equipment used. A great morning!”
